Güeyu Mar grill their tuna over holm oak at their workshop in Ribadesella, on the Asturian coast, then pack it in Arbequina extra virgin olive oil from Torre de Canena. This is the white loin, lomo blanco, of wild almadraba red tuna, Thunnus thynnus, the Atlantic bluefin.

How to enjoy

Open the tin and let it come to room temperature before serving, because cold dulls the oil. Serve the loin whole on a plate with some of its own oil spooned over, good bread alongside, and little else. A dry sherry or a cold white works well with it.

It needs no cooking. Heating it would undo the grilling.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip.
