Güeyu Mar grill their mussels over dry eucalyptus wood at their workshop in Ribadesella, on the Asturian coast, then tin them in an escabeche built on Arbequina extra virgin olive oil from Torre de Canena and an aromatic apple vinegar. These are the medium size, 13 to 16 mussels to the tin.

How to enjoy

Serve them straight from the tin at room temperature, with the escabeche spooned over. Bread or plain crisps underneath and nothing else. That is how they are eaten in Asturias.

They need no cooking. A cold dry cider or a beer suits them better than wine.

Mussels in escabeche are usually steamed and then dressed. Güeyu Mar grill theirs first, over eucalyptus, so the smoke is in the mussel itself and not only in the sauce.

The escabeche is made with a single-estate Arbequina olive oil and apple vinegar rather than a generic oil-and-vinegar mix. It is worth eating on its own afterwards.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
