Espardeñas, the sea cucumbers Parastichopus regalis, are one of the scarcer things on a Spanish table. Güeyu Mar grill them over holm oak at their workshop in Ribadesella, on the Asturian coast, then tin them in Arbequina extra virgin olive oil from Torre de Canena.

How to enjoy

Open the tin and let it come to room temperature. Serve the pieces whole with a little of their own oil spooned over, and good bread alongside.

They need no cooking. Heating them would undo the grilling and toughen the texture. A dry white or a fino sherry works well.

Sea cucumber is unforgiving: a few seconds too long and it turns to rubber. Grilling it over holm oak and then preserving it in a single-estate Arbequina is an unusually careful way to handle it.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
