The lomo alto, the black loin, is the upper loin of the tuna, and the darker, richer counterpart to the white loin. Güeyu Mar grill it over holm oak at their workshop in Ribadesella, on the Asturian coast, then tin it in Arbequina extra virgin olive oil from Torre de Canena. The fish is wild almadraba red tuna, Thunnus thynnus.

How to enjoy

Let the tin come to room temperature before opening, because cold flattens both the oil and the smoke. Serve the loin whole with some of its own oil spooned over, and bread alongside.

It needs no cooking. Heating it would undo the grilling.

Why we love this

The black loin carries more fat than the white, which is why the holm-oak smoke sits on it so well. If you have tried their lomo blanco, this is the darker, fuller version of the same idea.

Almost all canned tuna is cooked inside the tin. Güeyu Mar grill theirs first and preserve it afterwards. The taste of fire is in the fish, not added to it.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
