Zubelzu's guindillas are the small, green peppers of Basque Country, picked young and brined to a perfect bite. These aren't mild: they carry a gentle heat and vinegar snap that makes them irresistible alongside cured meats, in a pintxo, or straight from the jar as a quick, savory snack. A staple of Basque bars and home tables alike.

About this product

Guindillas are traditionally harvested in the Tolosa region (Gipuzkoa province). Zubelzu has perfected the pickling process, keeping each pepper intact and crisp while infusing it with just enough acidity to complement rather than overpower the vegetable's natural fruity undertones. Glass-jarred and shelf-stable, they're a pantry essential for anyone who enjoys Spanish encurtidos.

How to enjoy

  • Serve on a wooden board with Iberian cured meats and manchego cheese.
  • Top a montadito of creamy cheese or jamón with a single guindilla for heat and contrast.
  • Add a handful to a mixed green salad or coleslaw for acidity and bite.
  • Pair with pulpo a la gallega or grilled white fish.
  • Eat straight from the jar as a no-fuss aperitivo with a vermut or beer.

⭐ Why we love this

Guindillas are the soul of Basque gastronomy—these tiny, brined peppers are a mark of authenticity that you'll find in every txoko (gastronomic society) and pintxo bar from San Sebastián to Bilbao. Zubelzu's technique preserves the pepper's natural sweetness while delivering that signature vinegar bite, making them impossible to stop eating.

🍷 Pairing suggestion

Serve ice-cold with a glass of txakoli (Basque Country's signature crisp white wine) or a dry Fino sherry—the acidity mirrors the brine perfectly. They're also the ideal pintxo topper alongside aged Manchego or jamón, or scattered over grilled seafood to cut through richness with their gentle heat.

📍 From Spain

These guindillas hail from Tolosa in Gipuzkoa, the heart of Basque pepper country, where the microclimate and tradition of pickling have created a PDO-worthy reputation for generations. Zubelzu sources from the region's finest growers and uses time-honored brining methods to deliver peppers that taste of authentic Basque terroir.

Customer Reviews

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Finca La Rosala Marcona Almonds with Rosemary – Roasted Spanish Snack – Pack of 2 (2 × 90g)

Store owner replied: Thank you for the five stars, James, and I'm sorry about that drive. Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information. We can't give you back the time, but to cover the fuel we'd like to offer you $15 off anything in the shop on your next order. - Mateo, Iberian Direct
