Ramón Franco Galician Mussels in Escabeche, Giant 6-8 Pieces 78g

Ramón Franco sources giant mussels from the cold, nutrient-rich waters of Galicia's rías — the coastal inlets where these bivalves develop their distinctive briny sweetness. Packed at their peak in a sharp, aromatic escabeche of vinegar, bay leaf, and peppercorn, these 6–8 whole specimens per tin are substantial enough to anchor a plate of Spanish tapas or elevate a simple salad.

About this product

Escabeche is a traditional Spanish pickling method that both preserves seafood and deepens its flavor. Here, the vinegar cuts through the richness of the mussel, while the marinating liquid — infused with spices — adds complexity. The giants are meaty and tender, with none of the mushiness you might find in smaller, mass-produced varieties. They're shelf-stable for months, making them ideal for an impromptu gathering or a quiet dinner for one.

How to enjoy

• Serve chilled directly from the tin with crusty bread and a squeeze of lemon.
• Layer into a Spanish salad with roasted red pepper, white beans, and parsley.
• Toss into a seafood paella or rice dish during the last few minutes of cooking.
• Top an open-faced sandwich with rocket and a dollop of aioli.
• Pair with a crisp Albariño or a dry sherry.

⭐ Why we love this

Ramón Franco's giants represent the gold standard of Galician mussels — sourced from the pristine rías where cold Atlantic currents create the plumpest, most flavorful specimens. The escabeche here is no afterthought; it's a centuries-old preservation technique that transforms vinegar and spice into a complementary sauce rather than a mask.

🍷 Pairing suggestion

Serve these chilled as a standalone tapa with a crisp Albariño from Rías Baixas — the wine's mineral salinity mirrors the mussel's brine while its acidity echoes the escabeche. Alternatively, pair with a dry Fino sherry for a more traditional Spanish aperitif experience.

📍 From Spain

These mussels hail from Galicia's rías, particularly the waters off the coast where Ramón Franco has built its reputation on uncompromising sourcing. This northwestern region is Spain's premier mussel territory, where generations of marisqueros (shellfish harvesters) have perfected the art of selecting and processing these prized bivalves.
