La Catedral de Navarra has cultivated Navarre's white asparagus in the rich soils of the Ebro valley for generations. These extra-thick tips—the most prized part of the spear—are hand-harvested at peak tenderness and preserved in their own light brine. At 4–6 pieces per tin, each spear is substantial enough to command a plate, yet delicate enough to melt on the tongue.

About this product

White asparagus grows beneath the soil, shielded from sunlight, which keeps it pale and mild. The "yemas" or tips are the tender upper section, naturally sweeter and more buttery than the stalk. La Catedral sources only the extra-gruesas (thickest) grade, a mark of quality. The light brine preserves their texture and subtle flavor without overwhelming the vegetable itself. Glass jar, shelf-stable until opening.

How to enjoy

  • Serve chilled as a tapa with good olive oil, fleur de sel, and a squeeze of lemon.
  • Layer into a composed salad with jamón serrano, manchego, and roasted peppers.
  • Warm gently and dress with a warm vinaigrette of sherry and Dijon mustard.
  • Place atop a slice of toast spread with alioli for an elegant montadito.

⭐ Why we love this

White asparagus is Spain's most delicate vegetable treasure, and La Catedral's extra-thick tips represent the pinnacle of Navarrese cultivation. Hand-harvested at peak tenderness and preserved in their own subtle brine, these yemas deliver the buttery, mild sweetness that makes Spanish white asparagus a classic on refined Spanish tables—no heavy sauces needed.

🍷 Pairing suggestion

Serve chilled with a crisp Albariño or a dry Txakoli from the Basque Country for an elegant aperitif. Alternatively, warm them gently and pair with a glass of Fino sherry and aged jamón serrano for an unforgettable tapa combination that celebrates Spanish spring traditions.

Customer Reviews

Overall rating: 5 / 5 from 1 reviews.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Finca La Rosala Marcona Almonds with Rosemary – Roasted Spanish Snack – Pack of 2 (2 × 90g)

Store owner replied: Thank you for the five stars, James, and I'm sorry about that drive. Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information. We can't give you back the time, but to cover the fuel we'd like to offer you $15 off anything in the shop on your next order. - Mateo, Iberian Direct
