Güeyumar Sardine Tails in Charred Oil, Spanish Conserva, Pack of 2 (2 × 150g)

Güeyumar's sardine tails are a study in restraint. Sourced from the Atlantic waters off Spain's northern coast, these tender morsels are char-grilled and packed in their own oil — no excess, no pretence. At 150 grams, the jar delivers the best part of the sardine: the sweet, delicate flesh that falls from the bone. This is the kind of tin you find on the shelf of a seaside bar in Galicia, not hidden away.

The char marks are visible; the oil carries the warmth of smoke and flame. Sardines this small are prized for their tenderness, and the grilling method adds a subtle depth that canned fish often lack. Open the tin and you'll understand why Spanish cooks reach for Güeyumar when they want something honest and complete.

How to enjoy

• Serve chilled on toasted bread with fleur de sel and a squeeze of lemon.
• Toss into a warm salad of boiled potatoes, red onion, and parsley with the oil from the tin as dressing.
• Pair with dry albariño or a crisp vermouth.
• Add to a composed plate of Spanish cheese, jamón, and marinated vegetables.

⭐ Why we love this

Güeyumar's sardine tails represent the gold standard of Spanish conservas — the charring adds a subtle smokiness that elevates canned fish beyond preservation into craft. These are the tails premium Spanish restaurants stock, where the balance of delicate flesh, visible char, and clean oil reflects generations of Atlantic fishing tradition.

🍷 Pairing suggestion

Serve with a chilled Albariño from Rías Baixas or a dry Fino sherry — the wine's salinity echoes the ocean, while the char's subtle smoke complements both. Perfect as a standalone tapa with fleur de sel and lemon, or layered into a composed plate with aged manchego and jamón ibérico.

📍 From Spain

Sourced from Atlantic waters off Galicia and the northern coast, Güeyumar is rooted in a region where sardine fishing and artisanal tinning are cultural anchors. This is the conserva you'll find in traditional seafood bars from A Coruña to Vigo — produced with the minimal intervention that defines authentic Spanish canning.
