The ronqueo is the ritual butchering of a whole tuna, in which each part of the fish is separated and named. This box brings those cuts together: the white loin, the black loin, the descargamento, the ventresca and the morrillo, all from wild almadraba red tuna, Thunnus thynnus, chargrilled over holm oak and tinned in Arbequina extra virgin olive oil from Torre de Canena.

Open them side by side and taste them in order, from the leanest to the fattest. Same fish, same fire, same oil. The only variable is the cut, which is exactly the point.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
