Bonito del norte, the albacore Thunnus alalunga, is the pale, fine-grained tuna of the Bay of Biscay, and the one Spain prizes above the rest for canning. Güeyu Mar cook it over open coals at their workshop in Ribadesella, on the Asturian coast, and pack it in extra virgin olive oil.

How to enjoy

Room temperature, in large pieces rather than flaked. Good with roasted peppers, with white beans, or simply on bread with the oil from the tin.

No cooking. A cold white, an Albariño or a Txakoli, suits it.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
