Sarda is the Atlantic bonito that Spanish fishermen have salted and preserved for centuries, yet rarely appears outside Spain. Felisa Gourmet sources whole sarda from the cold waters off Barbate, in Cádiz, then hand-fillets and packs them in oil with smoked sea salt. The result is bold and mineral—nothing like the mild tinned fish you may know. Each fillet carries the ocean's character: firm, concentrated, complex.

About this product

Sarda (Euthynnus alletteratus, Atlantic bonito) is leaner and more intense than its cousin skipjack. Felisa has used the same salting and curing methods since their founding, working with the traditional boats of Barbate's fishing fleet. The oil preserves the fillets while adding its own subtle note. These are not delicate; they are assertive, meant to announce themselves on a plate.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip.
