Eutimio Hake Cheeks, Spanish Canned Seafood, Pack of 2 (2 × 135g)

Cocochas de merluza — the tender, gelatinous throat muscles of hake — are a delicacy along Spain's Atlantic coast, prized for their silky texture and subtle briny sweetness. Eutimio, a storied Spanish canning house, sources these morsels fresh and preserves them in their own gelatin, creating a conserva that tastes like the sea itself.

About this product

These canned hake cheeks arrive packed in their natural juices, without added oil or sauce, so the delicate flavor remains front and center. The texture is almost custard-like — they dissolve on the tongue with a whisper of umami. Cocochas have been a cornerstone of Spanish tapa culture for generations, equally at home on crostini, stirred into creamy pasta, or eaten straight from the tin with a glass of Albariño.

How to enjoy

• Serve chilled on toasted bread with a squeeze of lemon and fleur de sel.
• Toss into warm pasta with butter, garlic, and a pinch of saffron.
• Fold into a simple fish salad with white beans and sherry vinegar.
• Pair with a crisp Riojas white or Galician Albariño wine.

⭐ Why we love this

Cocochas represent the ultimate expression of Spanish seafood craft — a delicacy that commands premium prices in Michelin kitchens yet remains a beloved tapa in village bars from Galicia to the Basque Country. Eutimio's minimal approach (no oil, just natural gelatin) honors the ingredient's purity, letting the hake's briny sweetness and silken texture speak entirely for itself.

🍷 Pairing suggestion

These ethereal morsels are perfection with a chilled Albariño from Rías Baixas — the wine's salinity and stone-fruit notes amplify the hake's oceanic character. Alternatively, serve as part of a traditional Spanish seafood tapa spread with a dry Fino sherry for an authentic coastal experience.
