The cannery's own recommendation: room temperature, straight from the container, so the aroma and the texture come through. Cold plates and simple presentations. Nothing that covers it up.

The belly gets the attention, but the tarantelo carries much of the same depth with more structure behind it. It is the cut to reach for when you want the fish to taste of itself and still be something you can slice.

Green Stick is a line method that takes large tuna and leaves the rest of the shoal alone. Ike jime despatches the fish at once, which is why the colour and the texture survive the journey to the tin. Both cost the cannery time.
