The estibadoras of Tarifa have been cutting and packing tuna by hand for more than a century. This is their everyday ventresca: the rosy, buttery belly of Mediterranean bluefin, caught locally off Tarifa and laid into the tin fillet by fillet.

About this product

Ventresca is the belly cut, the part where the fat is woven through the muscle rather than layered on it. That is what gives it the soft, almost spreadable texture and the marine depth that sets it apart from the loin.

Everything happens in Tarifa, from the ronqueo, the ritual butchering of the whole fish that the town has practised for generations, through to the sealing of the tin. The estibadoras select, clean and place each fillet themselves. The olive oil is there to carry the flavour and protect the texture, not to mask anything.

The USPS required a signature on the delivery. This was unknown to me. I had to drive 30+ mile to retrieve the item, vice delivery to my address.

Our parcels travel as tracked international post with Correos in Spain, and USPS takes over for delivery in the US. We don't ask for a signature when we post, but it turns out USPS releases these parcels against one. At most addresses that just means signing at the door; in your case the delivery didn't go through, so USPS held it at the nearest post office, and that cost you a long trip. The surprise is partly on us, so we're adding a clear line about it to our shipping information.
